Smashed Feta Flatbread

Meet the most delicious way to eat feta cheese this summer. These Smashed Feta Flatbread is super satisfying and refreshing at the same time.

I’ve been seeing the idea of smashed feta all over Instagram.

Essentially this Smashed Feta Flatbread is just feta cheese, mixed with oil, vinegar, lemon juice, and fresh herbs. Everything is “smashed” together to make something that almost resembles a creamy dip-meets-dressing. In short, it’s delicious.

I couldn’t stop thinking about it over a flatbread for summer. Deliciously grilled bread, savory smashed feta, and a crunchy chopped salad. The combination is so good.

I have to give credit to this meal too. It finally helped me to eat lunch.

I’ve had the toughest few weeks. A move to a new town; a disastrous house; no childcare; a car crash. Oh and we need to move again in 2 weeks.

To say my self-care has gone out the window would be an understatement.

I’ve been in survival mode. Eating what I can, when I can.

And for the most part, I’m okay with that. I know that a few weeks won’t make or break my health. And, as long as I eat something and don’t skip meals, I’m just going with it.

But finally, I made this recipe. And it kinda brought me back to life.

At last, I ate some veggies and something that wasn’t just convenient. And honestly, it felt amazing.

Nourishment is a form of self-care. And sometimes we just need a little push 🙂

Whether you need a push or not, this Smashed Feta Flatbread recipe is so delicious. Serve it as an appetizer to guests or make it for lunch or dinner! It’s so fun and comes together in no time.

Why You’ll Love This Smashed Feta Flatbread

I’m a broken record when it comes to my philosophy about food: it’s gotta taste good.

Most of us know that vegetables are important to include in our diets. They’re nutritious and full of essential nutrients like vitamins, minerals, antioxidants, and fiber.

But most of us also would rather not just eat a plain piece of raw broccoli, ya know?

They’ve gotta taste good. And this flatbread is such a fun way to do just that.

Add your chopped salad on top of delicious, savory smashed feta and a warm grilled flatbread, and you’ve got the most delicious appetizer, side dish, or meal in no time.

Hot tip: if you’re serving or eating this as a meal, an easy protein – like seared salmon or a chicken kebab – is so good with it.

If You Love This Smashed Feta Flatbread, Try These

Ingredients You’ll Need

  • Feta cheese: Make sure to use a block of feta in brine. It will retain the most moisture and be easiest to smash.
  • Olive oil: Any good olive oil works here. You can also use avocado oil.
  • Red wine vinegar: Red wine vinegar adds a little acidity to help blend the smashed feta.
  • Lemon: Lemon juice keeps everything fresh and adds a little burst of flavor. I love this citrus juicer to get the most out of my lemons.
  • Dill: Fresh dill adds so much flavor! If needed, you can use dried dill, but make sure to use less as the flavor is more potent.
  • Persian cucumber: I love Persian cucumbers because they’re seedless with thinner skin.
  • Cherry tomato: Any tomato variety works in this recipe. If you’re using a large tomato, make sure to chop it finely.
  • Red onion: A little goes a long way and adds plenty of flavor. Dice it well.
  • Flatbread: Use large flatbread or naan – both work great!

Smashed Feta Flatbread Tips

  • Grilling the flatbread: If you don’t have a grill, try grilling the flatbread on a grill pan or even on a pan on the stove. I have a grill but still opted to use a grill pan for ease 🙂
  • Storage: If making the flatbreads ahead of time, prepare the salad and smashed feta. When you’re ready to eat or serve, grill the flatbread and assemble.

So delicious and easy. I had fresh mint from the garden that I chopped and added as well. Could definitely add leftover (or fresh) grilled chicken or steak to make it more substantial!
