These Peanut Butter & Chia Jam Bites are an easy, high-protein snack made with simple ingredients. Perfect for meal prep, lunchboxes, or a delicious kid-friendly sweet treat.

We don’t praise frozen fruit nearly enough.

It’s so easy – it’s convenient, last a long time in your freezer, is relatively inexpensive, and is always in season.

From a nutrition and taste standpoint, it’s also topnotch. Frozen fruit is often picked and preserved when it’s at its peak, meaning it retains all of its nutrients and flavor.

As a dietitian, I truly can’t recommend frozen fruit enough.

I put frozen fruit in smoothies almost daily. It’s a great and easy way to get a boost of nutrition, make the smoothie nice and thick, and also add delicious flavor.

But turning frozen raspberries into this incredible chia jam could be my new favorite thing to do with frozen fruit.

The jam is simple – made with just frozen raspberries, chia seeds, and honey or maple syrup. The bites are then topped with a little peanut butter and coated in chocolate.

Prepare ingredients

Prepare your ingredients to make these Peanut Butter & Chia Jam Bites. You’ll need frozen raspberries, maple syrup, chia seed, peanut butter, coconut oil, and chocolate chips.

Line a baking sheet with parchment paper.

Prepare jam

Add the raspberries, maple syrup, and chia seeds to a large pot over medium high heat.

Thicken jam

Let the mixture heat up and cook, stirring occasionally, for about 5-10 minutes until the raspberries cook down and a jam-like consistency forms. You can use a wooden spoon or a fork to gently mash the raspberries as they cook. 

Remove mixture from the heat and set aside to thicken for another 5-10 minutes. 

Spoon jam into bites

Using a spoon, place circles of the raspberry chia jam onto the parchment paper (about 1-2 teaspoons each in size – you should have about 12 bites). You can gently use the back of the spoon to form it into a circular shape. Place in the freezer to harden for at least 1 hour.

Prepare peanut butter

In a small bowl, add the peanut butter and 1 teaspoon of the coconut oil. Microwave for about 1 minute and then mix to combine.

Freeze bites

Once the raspberry chia jam bites have been in the freezer for at least 1 hour, place a small amount of peanut butter on top of each bite (about 1 teaspoon each). Place in the freezer again for at least 20 minutes.

Melt chocolate

Add the chocolate chips to a microwave-safe bowl with the remaining 1 teaspoon of coconut oil. Microwave on high for about 2 minutes, stirring halfway. Stir until the chocolate chips are fully melted and the mixture is smooth.

Dip bites in chocolate

Working quickly, gently drop each peanut butter chia bite into the bowl of chocolate. Using a spoon, gently spread the chocolate so that it covers each bite fully. Note that you may need to re-freeze the chia bites halfway through if they become too soft.

Place the chocolate covered bites in the freezer for another 20 minutes to harden. Let thaw for a few minutes and then serve.

  • Peanut butter: Sweetened peanut butter is best because it has a slightly thicker and more cohesive texture, although unsweetened or natural peanut butter will work too.

For the peanut butter, it helps make it drippier so that it’s easier to spoon onto the raspberry mixture and also helps when the peanut butter is frozen. For the chocolate, it makes the melted chocolate smoother and a little thinner.
  • Chocolate chips: I used semisweet chocolate, but you can also use dark chocolate or milk chocolate.

  • Dipping in chocolate: It’s easiest to gently spoon chocolate over the bites instead of tossing them around in the bowl of melted chocolate, as they soften quickly. Make sure to work fast — you can return them to the freezer to harden if needed for a few minutes in between dipping them in the chocolate.
  • Serving suggestion: Let the bites thaw for a few minutes before eating them so that the inside is jammy, hot hard.
  • Variations: These bites would also work well with other frozen fruit! You can try frozen strawberries, cherries, and/or blueberries.
  • Storage: Store these bites in a Ziplock bag in the freezer for up to 1 month.

Yes! Fresh raspberries will work well. Since they may cook down a little faster than frozen raspberries, keep an eye on the mixture as it cooks and remove it from the heat once it reaches a thick, jam-like consistency.
