As a dietitian, I love fruit. It’s delicious and it’s full of important nutrients.
As a busy mom, I rarely eat enough fruit.
Sometimes, I’ll blame it on the fact that I’m saving the fruit for my kids. Other times, it might be because of time constraints.
But most of the time, I just don’t think to grab a quick piece of fruit.

The base is made with plenty of seasonal, ripe strawberries. The strawberries are tossed with lemon juice, a little brown sugar for sweetness, and a little bit of cornstarch.

How To Make Strawberry Crumble

Preheat the oven
Preheat the oven to 350 F. Lightly grease a small baking dish (I used one that was 6.5 x 7 inches, but any small size will do!).

Slice strawberries
Cut the stems off the strawberries and slice them in half vertically. For strawberries that are especially large, you can slice them into 3 vertically.

Add strawberries to bowl
Add the sliced strawberries to a large bowl.

Coat strawberries
Squeeze the lemon juice over the strawberries and sprinkle the cornstarch and brown sugar on top. Using your hands, gently toss to combine, until all of the strawberries are coated well. Set aside.

Mix ingredients in bowl
In a separate bowl, add the oats, flour, brown sugar, vanilla extract, and salt. Pour the coconut oil on top. Using your hands, mix everything together. You can gently rub the mixture together using your fingertips to help it set.

Add oat mixture to strawberries
Sprinkle the flour and oat mixture over the strawberries and gently press it down.

Bake in preheated oven
Bake in the preheated oven for about 30 minutes, until the oat mixture has browned and the strawberries have softened.

Add toppings
Top Strawberry Crumble with whipped cream or vanilla ice cream and serve.

- Whole wheat flour: Whole wheat flour adds more filling fiber to the crumble topping. If needed, you can replace with all-purpose flour.
- Vanilla extract: Just a little for vanilla flavor!
- Coconut oil: Coconut oil binds the crumble together. You can substitute for melted butter if needed.

- Baking dish: I used a small baking dish, which layers the strawberries in a thicker layer and also leaves them slightly firmer. You can use any size baking dish. A large baking dish will yield a more spread out strawberry layer and as a result, softer/more cooked strawberries.
- Topping: Make sure to top your crumble with a fun topping! I recommend whipped cream, vanilla ice cream, or even Greek yogurt for a high protein, high fiber snack.
- Make ahead: While you can store this recipe and eat leftovers, it’s best when served and eaten on the same day.
