Easy Peach Cobbler

Your summer needs a good peach cobbler recipe. And this one is not only super easy, but also so delicious.

Little compares to summertime produce.

Juicy watermelon. Ripe berries. And of course, fresh peaches.

There’s so much available this time of year. And it all tastes so fresh and good!

If you tend to eat more fruit during the summer than at other times of the year, you’re not alone. Not only are many fruits in season right now, but also, fruit is just hydrating.

Cold fruit can be so refreshing on a hot day. It’s totally normal to crave fruit in the summer than in the winter.

And you know what else? It’s perfectly okay if you’re not only eating plain, fresh fruit.

I mean, nothing wrong with that. It’s delicious right now! But, like with anything, it’s okay to mix up how you eat your fruit too.

Freeze it and blend it into smoothies. Chop it up and add it to a salad. Grill it at your BBQ (yum).

Or make something like this Easy Peach Cobbler. Yep, you can make fruit into dessert. And nope, it doesn’t “cancel” out any nutrients.

Sure, dessert isn’t the most nutritious food in the world. And I’m not suggesting you eat this dessert for its nutrition benefits.

But at the same time, it’s really important to recognize that it’s okay to eat fruit in this way too.

Summertime fruit is so fresh and delicious. And if you want to use some to make dessert – go right ahead.

This Peach Cobbler, specifically, might be one of the best things you’ll eat all summer. If I do say so myself 🙂

Slice the peaches

Preheat the oven to 400 F.

Wash the peaches and leave the skin on. Slice into small slices.

Layer the peaches in a baking dish

Arrange the peaches on the bottom of a 9×13 baking dish, making sure to fully cover the bottom of the dish.

The slices can be layered on top of each other if needed (it’s better to have them layered than to have empty space!).

Squeeze the juice of 1/2 a lemon over the peaches and set aside.

Mix dry ingredients

In a large bowl, add the flour, sugar, baking soda, and salt.

Mix to combine.

Add the butter

Pour the butter into the bowl and mix until the mixture is cohesive.

Sprinkle mixture onto peaches

Sprinkle the flour mixture on top of the peaches, making sure to add some larger clumps throughout.

Bake for 30 min

Bake in the preheated oven for 30 minutes.

Serve & enjoy

Serve with or without vanilla ice cream and enjoy!

Notes:

  • Get the most out of your peaches: Slice your peaches in half, then remove the pit. From there, cut each half into thin slices.
  • Dairy free: To make this peach cobbler dairy free, swap the melted butter for melted coconut oil.
  • Ice cream: Something about peach cobbler and vanilla ice cream just go together. It’s optional, but highly recommended to serve this vanilla ice cream 🙂
  • Storage: Store peach cobbler in an airtight container in the fridge for up to 1 week.

  • 5-6 medium-sized fresh peaches
  • 1 lemon
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons melted butter
  • Optional: vanilla ice cream to serve
