Breakfast Quesadillas with JUST Egg Folded

I don’t think I’ve ever made something before and been so amazed with myself on the first try. These breakfast quesadillas are where it’s at: easy to make, incredibly delicious and believe it or not, plant-based.
These quesadillas are made with just a few simple ingredients: olive oil, chopped bell peppers, tortillas, cheddar cheese and JUST Egg Folded. They’re then topped with mashed avocado, salsa and scallions. Toppings are optional, but highly recommended.
It has 7 grams of protein per serving, which is 1-2 more grams than traditional eggs. It literally looks and even tastes like an egg, but with less carbon emissions than standard eggs. The best part though? It’s frozen, so it lasts a while in your freezer and is easy to cook. You can simply pop in the toaster, a microwave or a skillet to cook in just a few minutes.

Ingredients
- 2 bell peppers any color
- 4 tablespoons olive oil divided
- 2 JUST Egg Folded eggs
- 2 9- inch tortillas
- 1/3 cup shredded cheddar cheese
- 1 teaspoon taco seasoning
- Salt
- Pepper
Instructions
- Finely chop peppers. Add 2 tablespoons olive oil to a pan over medium high heat. Add peppers, taco seasoning, salt and pepper and sauté for 5-10 minutes, until soft. Remove peppers from pan and set aside.
- Add 1 tablespoon of olive oil to the pan. Turn heat down to low. Add 2 JUST Egg Folded to the pan and cook for 5 minutes, flipping halfway. Remove eggs from the pan and set aside.
- Assemble tortillas: place 1 tortilla on a plate or cutting board. Separate the 2 JUST Egg Folded so they’re no longer folded. Top tortillas with cheese, eggs and peppers.
- Add remaining 1 tablespoon olive oil to the pan over medium heat. Once oil has spread and pan is hot, carefully place assembled tortilla on top of the pan. Top with remaining tortilla. Cook for 2-3 minutes, and then carefully flip quesadilla. Cook for another 2 minutes on the other side.
- Transfer quesadilla to a cutting board and let cool. Cut into 8 slices. Optional to add mashed avocado, salsa and/or scallions on top. Serve warm.
