The most dreamy combination of savory and sweet! This salsa makes a perfect appetizer, garnish, or dip.
The other weekend, I took my 2 toddlers peach picking. My husband had to do some things around the house in between our moves, so I wanted to get the kids out of the house.
Other than the major mom feat of doing that solo (go me though?!), it was so much fun.
My 16 month old is still at that age where he’ll try almost any food. And he loved peaches.
My 3.5 year old claimed to not like peaches, but was loving them while we were picking them.
They each probably ate about 5 peaches throughout the course of the day.
Not only is fruit picking a fun activity, but it’s such an awesome, low pressure way to introduce kids to new foods. It gives them the autonomy of picking it themselves. It teaches them something fun by showing them where and how the fruit is grown.
And fruit doesn’t taste any better than when it comes straight from the farm.
I was so glad we went and got to have that experience.
After coming home with pounds of peaches though, I realized how underutilized peaches often are in my recipes.
And while they’re still in season, that needed to change – ASAP.
So, I this incredibly delicious peach salsa was born. It’s SO flavorful!
Peaches are the star of the show – they’re cut into the biggest pieces so that they really shine. When paired with diced tomato, bell pepper, and red onion, it all comes together in the most perfect savory and sweet blend.
Scoop it up with chips as an appetizer, add it as a topping to grilled chicken or salmon, or serve it as a side dish. This one is not to be missed this summer.
Chop the fruit & veg
Prep all of the ingredients. Chop the tomato, red onion, peaches, basil and bell pepper. Zest the lime.
Add everything to a large bowl
In a large bowl, add the peaches, tomato, bell pepper, red onion, basil, lime zest, and lime juice. Toss to combine.
Drizzle with oil & serve
Drizzle with olive oil and sprinkle with salt. Toss again to combine. Serve with tortilla chips.
Notes:
- Peaches: Make sure these are ripe, but still a little firm for the best result.
- Basil: Many peach salsa recipes uses cilantro. But because cilantro currently tastes like soap to me, I opted for basil. I love the peach-tomato-basil combo in the summer and prefer it this way!
- Storage: Store salsa in an airtight container in the fridge for up to 3 days. The flavors will blend together more the longer that it sits.
