Ingredients
2cupsplain Greek yogurt
2tablespoonsmaple syrup
2teaspoonsvanilla pudding mix
1teaspoonvanilla extract
1-2medium-sized bananas
10-15vanilla wafer cookies
To garnish: whipped cream or Cool Whip
Instructions
In a bowl, add the Greek yogurt, maple syrup, vanilla pudding mix, and vanilla extract. Mix well until smooth and thoroughly mixed.
Slice the bananas into even slices and set aside.
In small, wide-rimmed glasses, layer the banana pudding. Add the yogurt mixture, followed by about 4-5 vanilla wafers, followed by the banana slices, and then more yogurt. Note that the amount of banana slices and wafers you use will depend on the size of your glass or jar - you want a solid layer of each that fully fills the glass or jar. Depending on the size of your glass or jar, you should have about 2-3 cups of banana pudding.
Place in the fridge to set for at least 4-6 hours or overnight.
Top with whipped cream or Cool Whip and an additional wafer and banana slice.
