These homemade gyros will be your new favorite lunch or dinner. They’re packed with flavor, super customizable and filling.

Ingredients
4whole wheat pitas
1/4cupolive oil
1lbground protein of choiceI used Beyond Meat
2roma tomatoes
2mini cucumbers
1/2red onion
1/2cuptzatziki
Fresh dill
Salt
Pepper
Instructions
Brush pita with olive oil and place on a pan or grill pan until warm. Set aside.
Add protein to air fryer and sprinkle with salt and pepper. Air fry for about 12 minutes, or until cooked through and a safe internal temperature is reached (this will vary by protein!). Halfway through, using a wooden spoon, break up the protein into smaller pieces.
While protein is cooking, slice tomato, cucumber and onion. Chop dill. Set aside.
Assemble gyros: top each pita with 2 tablespoons tzatziki, tomato slices, cucumber slices, red onion slices and protein. Top with fresh dill.
