Line a small rectangular baking dish with parchment paper.
In a large bowl, add all of the crust ingredients, plus salt to taste. You may want to use your hands to gently knead the mixture together.
Add to the baking dish, using your hands to firmly pack it in tightly. Place in the fridge to harden for 30 minutes
Make the filling. In a food processor, add the peanut butter, cream cheese, and maple syrup. Process until well combined.
Transfer the mixture to a large bowl. Fold in the whipped cream and a pinch of salt.
Spoon the mixture on top of the crust, using the back of a spoon to spread it evenly throughout. Place in the freezer to harden for at least 1 hour (or overnight).
Remove from the freezer and let thaw slightly, then cut into 8 squares.
