Ingredients
1/2cupplain Greek yogurt
1/4cupcreamy peanut butter
1tbsphoney
2tablespoonspeanutsroughly chopped
1cupchocolate chips
1tablespooncoconut oil
Instructions
Line a baking sheet with parchment paper.
Mix yogurt, peanut butter, and honey until smooth.
Place yogurt mixture by the spoonful onto the baking sheet. Using the back of the spoon, shape each dollop into a round, circular shape.
Sprinkle chopped peanuts on top of each round of yogurt. Stick popsicle stick firmly in the center of each yogurt round.
Place in the freezer to harden for at least 1 hour.
Once hardened, melt chocolate chips with coconut oil in the microwave for about 1 minute and 30 seconds, stirring every 30 seconds.
Remove the yogurt pops from the parchment paper and dip into the melted chocolate, using a spoon to ensure they’re evenly covered. Place back on parchment paper and in the freezer to harden again (optional: add flaky salt, sprinkles, or more chopped nuts on top of chocolate).
