Brush flesh side of salmon evenly with olive oil and sprinkle with salt and pepper. (Use more olive oil as needed to evenly cover all of flesh of salmon).
Place salmon flesh side down/skin side up on a pan over medium high heat. Cook for about 4-5 minutes, without moving, until golden on top.
Flip salmon so it’s facing flesh side up and transfer to a baking sheet. Bake in preheated oven for about 10-12 minutes, depending on doneness preference (more time for a more well done salmon).
