Ingredients
4-5medium carrotsor about 1 cup shredded carrots
2eggs
1/4cupwhole wheat flour
1teaspoongarlic powder
1/2teaspoonsalt
1/2teaspoonpepper
Optional: grated parmesan cheese
Instructions
Roughly chop carrots and grate in a food processor until finely shredded. If using already shredded carrots, skip this step.
Add all ingredients to a bowl and mix into well combined.
Pour mixture into a waffle maker and cook until waffles are set. Makes about 5 small waffles or 2 large waffles.
