Ingredients
Wild caught sockeye salmon
Olive oil
Cucumber
Tomato
Red onion
Lemon
Salt and pepper
Instructions
Preheat oven to 400 degrees. Brush salmon with a little olive oil, salt and pepper.
Place salmon on a pan over high heat. Let it cook for about 4-5 minutes or until golden underneath.
Place salmon on a baking sheet and finish cooking in the oven for 10-12 minutes.
While salmon is cooking, chop cucumber, tomato, and red onion.
In a bowl, mix chopped veggies with olive oil, lemon juice, salt and pepper.
Add a squeeze of lemon, and enjoy!
