Ingredients
3bell peppersany color
1/2yellow onion
1/4cupolive oildivided
1lbsalmon3-4 filets
1teaspoonpaprika
1/2teaspoononion powder
1/2teaspoonthyme
1/2teaspoonoregano
4tortillas
2ripe avocados
1lime
Salt
Pepper
Instructions
Preheat oven to 400 F. Line a baking sheet with parchment paper.
Slice bell peppers and onion into thin strips. Toss with 3 tablespoons of olive oil, salt and pepper and place evenly on the lined baking sheet. Set aside.
In a shallow bowl, mix together spices, salt and pepper. Brush salmon fillets with remaining 1 tablespoon of olive oil and rub onto spice mixture, so that the top gets well coated with spices.
Add salmon to the baking sheet with the peppers and onion and bake for 30 minutes.
When there are a few minutes remaining, add tortillas to the oven on a separate baking sheet to warm them.
Before serving, mash avocado and squeeze lime juice. Serve with fajitas.
