Ingredients
Crust
1 1/2cupoat flour
1/4cupcoconut oilmelted
1/4cupmaple syrup
Salt
Filling
1/2cupof fresh lemon juiceabout 5 lemons juiced
Zest of 1 lemon
1/2cupmaple syrup
4eggs
Salt
To garnish: powdered sugarlemon slices
Instructions
Preheat the oven to 350 F. Line a small baking dish with parchment paper.
In a medium bowl, add all of the ingredients for the crust with a pinch of salt. Mix well until combined.
Pour the mixture into the lined baking dish, spreading it evenly throughout (it’s easiest to use your hands to gently press the crust down and make sure it’s evenly distributed). Bake in the preheated oven for 15 minutes.
While the crust is in the oven, prepare the filling. Add the lemon juice, lemon zest, maple syrup, eggs, and a pinch of salt to a large bowl. Whisk well until mixture is completely combined, making sure no whites of the eggs are visible.
When the crust comes out of the oven, pour the filling mixture on top. Return to the oven and bake for an additional 20 minutes.
Let the pan cool until it reaches room temperature. Once at room temperature, place in the fridge to chill for at least 4 hours or overnight.
Cut into 8 bars. Top with powdered sugar and thinly sliced lemon.
