30 Minute Recipes to Make This Spring

Spring is my favorite season ever.

Not only are the cherry blossoms and trees amazing to see, but also, it feels like when everyone really comes out of hibernation after the cold winter. Instant mood boost.

I also find that my food preferences start to slightly shift as the weather gets warmer. Instead of hearty, comforting dishes, I start to crave things that are bright and refreshing.

But as always, food needs to be simple. No one’s got time to spend hours in the kitchen. And you certainly don’t need to.

Save this list whenever you need quick and easy (and still delicious!) meal ideas for spring. All of the recipes are truly 30 minute recipes that you can have on the table in no time.

Bonus: save leftovers to eat the next day. Many of these work well as leftovers too!


1. Creamy Tuscan Salmon

This Tuscan Salmon is made in one pan and takes just 30 minutes to make. It doesn’t get easier than that!

It’s full of nutrients from the salmon, tomatoes, onion, garlic, and kale (did you know onion and garlic provide amazing prebiotics – the precursors to probiotics?!), and it’s also just full of flavor. This is not your standard seared salmon.

2. Burger Bowls with Crispy Onions and Special Sauce 

Burger bowls is like taking the best parts of a burger and throwing it all into a big bowl. They’re almost like a deliciously loaded salad.

But most importantly, let’s talk about the sauce. Because this special sauce is something you’ll want to add to everything. It’s that good.

3. 20 Minute Mediterranean Hummus Bowls

Meet what I know will be one of your new go to weekday meals: 20 Minute Mediterranean Hummus Bowls. These delicious bowls are so easy to throw together and are super filling, too.

4. Easy Baked Chicken Tacos

These tacos are high in protein and so easy to make. The fact that they’re made in the oven means there’s less work for you to do.

And these are full of flavor. A must make this spring!

5. Broccoli Caesar Salad

Meet your new favorite way to eat broccoli: Broccoli Caesar Salad with Crispy Chickpeas and Toasted Breadcrumbs. It’s packed with flavor and a nice twist on a classic caesar salad!

6. Loaded Italian Pasta Salad

This pasta salad makes lunch as easy as possible. You can make it ahead of time, have it ready to go in the fridge, and it only takes about 10 minutes to make. That’s a huge win in my book.

7. Black Bean Tacos

These tacos are perfectly crispy on the outside, with a warm soft texture on the inside. They’re full of protein, fiber, vitamins, and minerals.

And – because they’re so flavorful – they’re also so dang satisfying.

8. Honey Orange Juice Glazed Salmon

This Honey Orange Juice Glazed Salmon is not only delicious, it’s also nutritious and family friendly too. Truly the perfect way to serve salmon to just about anyone.

9. Spicy Peanut Noodles

Make these spicy noodles for an easy lunch or dinner. I love them paired with air fried tofu, seared salmon, or sautéed shrimp.

10. Edamame & Peanut Crunch Salad

Peanut dressing has got to be a top 5 dressing for me.

This salad also comes together with plenty of fresh crunchy veggies and add ons too.
