Double Chocolate Blended Baked Oats

These blended baked oats were another viral recipe that I was skeptical about… until I tried them. They’re so good. I guess that’s why they went viral!
Do you make different breakfasts every day or eat the same thing most days?
NGL, during the week, I eat the same breakfasts most days. I just find it easy – I like it and it fills me up, so I usually don’t feel super pulled to try new things (read more about eating the same foods on repeat here).
But, then every few weeks, I get entirely sick of what I was eating and need something new. Enter: these blender baked oats.
I’ve seen these floating around social media and they always look so good. I’d been wanting to try them for a while.
I love that they’re easy to make. Pretty much all you need to do is throw your ingredients into a blender and then into the oven.
Plus, it tastes like a warm, baked good for breakfast, but is also packed with nutrients.
And, it’s easy to make too: just oats, eggs and a little milk and you’re good to do.
And, if you’re not into cooking breakfast (look, I get that), make this a snack instead! It would be so delicious and filling in the mid morning or afternoon.
Preheat and blend
Preheat the oven to 350 F. Grease an oven-safe ramekin.
In a blender or food processor, add all ingredients except the chocolate chips. The rolled oats, milk of choice, egg, cocoa powder, maple syrup, baking powder and salt.
Blend until smooth. I use unsweetened vanilla almond when I make these, but any milk will work.
Mix in chocolate chips
Mix in the chocolate chips and pour mixture into the ramekin.
Bake for gooey goodness
Bake in the preheated oven for 20-25 minutes, or until the oats reach your desired texture (bake closer to 25 minutes for more well baked oats and closer to 20 minutes for more gooey oats).
Notes
- Batch cook: To make more than serving at a time, double or triple the recipe. You can bake the oats in multiple ramekins, or pour the mixture into a muffin tin. If using a muffin tin, the bake time will be shorter as muffins tins are a bit smaller, so make sure to check the oven after about 15 minutes.
- Flavors: If you want to mix it up, there are so many other flavors to try. Instead of cocoa powder, try adding peanut butter and chocolate for a peanut butter chocolate version. Or, skip the cocoa powder and chocolate chips and add fruit for a fruity version.
