Perfectly Seared Salmon

Cooking fish can be intimidating. I don’t know why – something about it just seems hard. I totally felt this way until about 2 years ago, when I finally learned how to cook salmon and realized it was actually the easiest thing ever to make (huge shout out to my friend Amanda who told me how to make it!).

Of all fish, I usually stick with cooking salmon (and sometimes make shrimp, which is also crazy easy!). This method is pretty fool proof. It gives you a perfectly golden sear on top and cooked, but not overly well done, fish in the middle. Because I’ve learned I’m not the only one who finds cooking fish a little intimidating, I’m super excited to share this foolproof, simple way to cooking salmon with you.

Typically, I just use olive oil, salt and pepper. You can use any spices you like if you feel like mixing it up or getting a little fancier. The other day I tried it with Trader Joe’s Everything but the Bagel Seasoning and it was SO GOOD (put this on between steps 3 and 4 though, otherwise the garlic will burn).

Ingredients  

  • 1 lb salmon fillet cut into 3-4 pieces
  • 1 tablespoon olive oil
  • Salt
  • Pepper

Instructions 

  • Preheat oven to 400 F.
  • Brush flesh side of salmon evenly with olive oil and sprinkle with salt and pepper. (Use more olive oil as needed to evenly cover all of flesh of salmon).
  • Place salmon flesh side down/skin side up on a pan over medium high heat. Cook for about 4-5 minutes, without moving, until golden on top.
  • Flip salmon so it’s facing flesh side up and transfer to a baking sheet. Bake in preheated oven for about 10-12 minutes, depending on doneness preference (more time for a more well done salmon).
