Not only is this meal made on one sheet pan, but it also comes together in about 30 minutes total and requires minimal effort on your part. There’s little better than an easy, delicious meal!
These fajitas are truly the ultimate in easy meals.
The only work required of you is pretty much chopping the veggies. After that, everything gets placed on a sheet pan, where the magic is done in the oven.
And, still, the end result gives you perfectly spiced, soft salmon and sweet roasted peppers, all on warm tortillas.
Delicious.
This meal is great to make ahead, too. Just bake the salmon and veggies ahead of time. Warm the tortillas up when you’re ready to eat and mash some avocado then too.
I love these fajitas for lunch or dinner. They contain so many different food groups to make a filling and satisfying meal: carbs, protein, fat, veggies and of course, tons of flavor.
The spice rub on the salmon is truly what gives these their flavor too, so make sure not to skimp out there! If you have it, you can also add garlic powder or cayenne pepper for a little spice.
Chop peppers
Preheat oven to 400 F. Line a baking sheet with parchment paper.
Slice bell peppers and onion into thin strips. Toss with 3 tablespoons of olive oil, salt and pepper and place evenly on the lined baking sheet. Set aside.
Mix the spices
In a shallow bowl, mix together spices, salt and pepper. Brush salmon fillets with remaining 1 tablespoon of olive oil and rub onto spice mixture, so that the top gets well coated with spices.
Bake everything
Add salmon to the baking sheet with the peppers and onion and bake for 30 minutes.
Notes
- To make sure salmon is cooked, I recommend using a thermometer to check the internal temperature. The safe internal temperature for salmon is 145 F.
- Store cooked salmon, peppers and onion in an airtight container in the fridge for 3-4 days. When ready to eat or serve, warm up the salmon and veggies plus the tortilla and add mashed avocado on top.

- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 4 tortillas
- 2 ripe avocados
- 1 lime
- Salt
- Pepper

- When there are a few minutes remaining, add tortillas to the oven on a separate baking sheet to warm them.
- Before serving, mash avocado and squeeze lime juice. Serve with fajitas.
