3-Ingredient Peanut Butter Mousse

Snacks are crucial.
They bridge the gap from one meal to the next. It would be tough to go from lunch to dinner (and often breakfast to lunch!) without an afternoon snack.
They’re also energizing. Because calories provide energy, snacks are the perfect vehicle to give your body much needed energy mid-afternoon or mid-morning.
That said, it can be hard to figure out what to eat for a snack.
While I love the classics like hummus and crackers, smoothies, and string cheese…. sometimes I need a little something more.
Enter: this Peanut Butter Mousse. It’s made with just 3 simple ingredients and makes the most delectable snack.
I love that you can make it ahead of time, too, to have snacks on hand for a few days. Having an afternoon snack to look forward to is such a small glimmer during a busy day!
I’ve been topping mine with some chocolate chips and fresh raspberries lately. It’s the perfect combination of protein, fiber, and deliciousness to keep you feeling full and satisfied.
Is this mousse the same thing as a dessert mousse? Absolutely not. And please don’t try to make it a replacement!
There’s room for both in a healthy diet and healthy relationship with food.

Prep the ingredients
You’ll need cottage cheese, peanut butter, and maple syrup.
Add ingredients to a food processor
Add the cottage cheese, peanut butter, maple syrup, and a pinch of salt to a food processor.
Blend
Blend on high for 2-3 minutes, until smooth.
Pour into cups
Pour blended mixture into cups
Garnish
Top with chocolate shell or chocolate chips, crushed peanuts, or berries.
Serve
Flaky salt is always delicious on top too!
Notes
- Cottage cheese: Make sure to use a low-fat cottage cheese. The texture vs. full-fat helps to keep the texture of the mousse thicker.
- Peanut butter: I used a natural peanut butter in this recipe since we’re adding maple syrup to sweeten. If you only have or want to use sweetened peanut butter, no problem! You may want to decrease the maple syrup to account for the extra sweetness. Start with 1 tablespoon and taste to adjust from there.
- Maple syrup: Want a sweeter mousse? Add an additional tablespoon of maple syrup. For a slightly less sweet mousse, only use 2 tablespoons of maple syrup.
- Variations: Make this a chocolate mousse by adding cocoa powder to the food processor. Want to make it even higher in protein? Add your favorite protein powder. The options are endless!
- Storage: Store mousse in an airtight container in the fridge for up to 4 days.
