This dessert is AMAZING.
And no, not because it’s has protein.
I almost didn’t want to mention the protein aspect. But you know… SEO. And the people love protein these days.
I do love that this mousse uses a secret ingredient in order to make it so high in protein: silken tofu.
We often adapt an “all or nothing” approach when it comes to nutrition. If you eat healthfully, then your dessert must be a healthy, black bean, coconut sugar version. And if you believe that all foods fit, you should only eat real deal desserts.
In reality, it’s okay to find the middle ground.
The fact that this recipe has silken tofu doesn’t automatically make it a “healthier” dessert. It simply means it has a bit more protein than your average chocolate mousse does. It’s still full of sugar and other delicious, dessert-y goodness 🙂
And honestly, I added the tofu not for protein, but for texture. Silken tofu in specific gives the most amazing, creamy texture when blended.
Mix in some melted chocolate, cocoa powder, and maple syrup, and you’ve got the most decadent dessert in just a few minutes.
All in all, yes, this dessert has protein. And it may help to keep you feeling fuller than a standard dessert! But it’s also just delicious. And that’s the most important reason to eat it 🙂
Prep ingredients
You’ll need dark chocolate, coconut oil, silken tofu, cocoa powder, and maple syrup.
Add chocolate and coconut oil
Add the dark chocolate to a bowl with the coconut oil.
Melt chocolate
Melt in the microwave by cooking on high for 2 minutes, stirring halfway through (alternatively, you can also melt chocolate using a double boiler on the stove).
Drain tofu
Drain the water from the tofu and roughly chop.
Add to blender
Add all ingredients to a large blender or food processor.
Blend
Blend until smooth, scraping down the sides as needed.
Top & serve
Top with whipped cream, shaved chocolate, or fruit.
Notes
- Chocolate: I’m normally a milk chocolate girl, but I highly recommend dark chocolate in this recipe. The mousse is so rich and sweet that dark chocolate works perfectly.
- Coconut oil: Adding this really helps the chocolate to melt smoothly. If you don’t have any, you can use butter, another neutral oil, or just skip it altogether.
- Silken tofu: Make sure to use silken tofu – not just regular! Silken tofu has a creamier texture that’s perfect for this mousse. Drain any excess water before blending, but no need to press the water out.
- Maple syrup: A little goes a long way! If you don’t have, you can swap for honey or omit it.
- Make more: To double (or triple!) the recipe, double or triple all of the ingredients except for the vanilla extract.
- Storage: Store this chocolate mousse in an airtight container in the fridge. It’ll stay for 4-5 days.
