You haven’t truly done breakfast until you’ve tried savory waffles. It’s a bold statement, I know. I’m standing by it. These waffles are delicious, easy, filling and the perfect vehicle for avocado – what more could you want?!
I totally forgot I had a waffle waker until the other week. Blame it on small NYC kitchens and the fact that half my kitchen appliances have to stay in storage. I randomly remembered about this waffle maker and had the sudden urge to get it out of storage that minute. It was time to make some waffles.
I started with the usual sweet suspects (one of my favorites is this Simple Mills waffle mix!). Then I started thinking, what about a savory waffle? I mean, how good does that sound?! It’s the perfect way to get some veggies in in the morning, especially for those of us that don’t love eggs (ahem, me).
If you’ve never made waffles before (I hadn’t until storage unit sprint 2020), they’re seriously easy to make. You just pour the batter into the waffle maker and they take about 2 minutes to cook. I use this waffle maker. It’s non-stick, easy to clean and makes the entire process super simple.
These waffles are packed with everything you want in your breakfast (or brunch): protein, fiber and even some veggies. I highly recommend them with mashed avocado and Everything but the Bagel seasoning on top and maybe some fruit on the side.
Ingredients
- 4-5 medium carrots or about 1 cup shredded carrots
- 2 eggs
- 1/4 cup whole wheat flour
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Optional: grated parmesan cheese
Instructions
- Roughly chop carrots and grate in a food processor until finely shredded. If using already shredded carrots, skip this step.
- Add all ingredients to a bowl and mix into well combined.
- Pour mixture into a waffle maker and cook until waffles are set. Makes about 5 small waffles or 2 large waffles.
