Snow Day? Here’s What to Bake

When Iโ€™m stuck inside, one of my favorite things to do is bake.

Itโ€™s cozy. Itโ€™s fun for my kids (for about 30 minutes). It gives us something warm and delicious to eat.

And honestlyโ€ฆ with everything theyโ€™re saying about this impending winter storm, I think we could all use all the activities ideas we can get.

Thereโ€™s only so much Paw Patrol you can play, ya know? Just me? Anyway.

These are some of my favorite baking recipes – ranging from nutritious to indulgent and from simple to a little more involved.

But of course, theyโ€™re all always easy. And delicious ๐Ÿ™‚


1. Easiest Cinnamon Sugar Bagels 

Itโ€™s not secret Iโ€™ve been obsessed with these bagels since first making them a few weeks ago. They have just 2 main ingredients and about 9 grams of protein per bagel. My kids love them too – which is always the biggest win. The perfect breakfast or snack to weather the storm!

2. Raspberry Chocolate Chip Baked Oatmeal

Having a nutritious, delicious baked good ready to go for breakfast? Yes please.

I used frozen raspberries in this recipe. And I think this is an important callout. Frozen fruit is often just as nutritious as fresh. A delicious and nutritous way to start your day.

3. One Bowl Chocolate Chip Banana Bread 

This banana bread literally never fails – it comes out perfectly every time. With just one bowl and really straightforward ingredients, it couldnโ€™t be easier to make either.

4. Edible Brownie Batter 

This simple snack tastes indulgent but is full of feel-good ingredients and plenty of fiber. It makes a really fun snack to have on hand.

5. Double Layer Chocolate Pumpkin Brownies 

These Double Layer Pumpkin Chocolate Brownies are a great dessert to keep on hand. IMO, theyโ€™re actually SO rich, sweet, and satisfying, that you really may want only one at a time.

6. 4-Ingredient Cookies & Cream Truffles 

These truffles are so fun to make. Use different sprinkles to add different colors to them. Did I mention how delish they are too?!

7. Tahini Brownies

Talk about cozy! These brownies are so ridiculously fudgey and delicious. Theyโ€™re the perfect warm and cozy addition to your snow day.

8. Dark Chocolate Pistachio Clusters 

These Pistachio Clusters – they truly hit all the boxes: theyโ€™re nourishing with both protein and fiber, theyโ€™re almost too easy to make, and theyโ€™re sweet and delicious.

9. Homemade Dunkaroo Dip (3 ingredients)

Fellow millennials who grew up on Dunkaroos: you have to try this homemade version of the dip. Itโ€™s soooo good and so easy to make. Pair this dip with a fun cracker, like graham crackers, teddy grahams, or animal crackers. Or have it with fruit like apple slices, strawberries, or pineapple.

10. Fluffy Blender Pumpkin Pancakes

Iโ€™ve always been a big fan of blender pancakes. But these pumpkin ones might be my favorite version yet. Theyโ€™re made with simple ingredients like eggs, canned pumpkin and oats. A little maple syrup gives them the perfect amount of sweetness. And a little baking powder makes them super fluffy.

11. Roasted Hot Honey Feta with Zaโ€™atar Pita Chips

This might be one of the most delicious things Iโ€™ve ever eaten. Itโ€™s sweet, salty, savory and spicy all in one. This recipe was inspired by one I saw on the New York Times. I immediately knew I had to make it.

It starts with roasting a block of feta cheese, which makes the cheese even softer and creamier. It also brings out the saltiness and flavor of the cheese.

12. Chocolate Chip Cookie Bars

Itโ€™s no secret I love a chocolate chip cookie. Theyโ€™re, hands down, one of my favorite foods. And in bar form? Even better.

I first made these bars as a fun whole wheat option for cookies. โ€œHealthier?โ€ Not necessarily. Just delicious with a little boost of fiber and protein ๐Ÿ™‚

13. Sweet and Salty Puppy Chow

If youโ€™re familiar with puppy chow (some also call them muddy buddies), you know how incredibly delicious it is. And if youโ€™re not, it is absolute pleasure to introduce you to this delicacy.

14. No Bake Peanut Butter Bars

While these are technically no bake bars, youโ€™ll have a lot of fun making them. Think: a delicious peanut butter cups meets slightly more wholesome ingredients.

15. Air Fryer Monster Cookies

Thereโ€™s nothing easier than making cookies in the air fryer. If you donโ€™t have candy on hand, just use chocolate chips – still equally delicious.

16. 4 Ingredient Peanut Butter Banana Bars

These bars are consistently the top recipe on my site – and for good reason. Theyโ€™re simple, full of feel-good ingredients, and so, so good.

17. Healthy Edible Cookie Dough

I love cookie dough, but thereโ€™s only so much you can eat before it becomes technically unsafe to eat raw, ya know? Enter this edible cookie dough – made with a few simple ingredients, itโ€™s as good as the real thing.

18. Chocolate Chip Mini Skillet Cookie

Cookies are the best, but thereโ€™s something even more fun about a skillet cookie. Grab spoons and dig in while itโ€™s still warm for the ultimate gooey deliciousness.

19. Hot Honey Goat Cheese Flatbread with Roasted California Grapes

The goat cheese in this flatbread is creamy and sweet with a little kick. Once cooked, the goat cheese adapts a custard-like texture. The flavors and textures complement the sweet roasted grapes so well. 

The bread itself gets golden and crispy on the outside, while still soft on the inside. A must try for this snow day!

20. Banana Chocolate Chip Oaties

I used to make these oaties allll the time, and somehow, totally forgot about them. It wasnโ€™t until I had a few extra ripe bananas on hand during the snowday that I remembered to make them againโ€ฆ and now theyโ€™ll definitely be added frequently to my rotation.
